Cookies and Vitamins a winning combo.

I don’t usually post recipes but my cousin Lorraine sent this to me  yesterday.  They sound so good I thought I would share them.  She also sent me an interesting report on vitamin D. I have the link below the cookies. Not sure how much, if any, Vitamin D Pumpkin Chocolate Chip Cookies contain, but  one can always dream.



2 C. flour                                                            2 cubes butter

1 heaping C Quaker Oats                                    1 C. dark brown sugar

1 t. baking soda                                                1 C. white sugar

1 t. cinnamon                                                            1 egg, slightly beaten

½ t. salt (optional)                                                1 t. vanilla

1 C + canned pumpkin

1 12 oz pack semi-sweet chocolate chips

Preheat oven to 350 degrees.

Combine flour, oats, soda, cinnamon in small bowl.

In larger bowl, cream butter using mixer. Gradually add in sugars. Add egg and vanilla and mix well.

Alternate addition of ½ dry mix and ½ pumpkin and combine well.

Stir in chocolate chips.

Bake 14-16 minutes. Makes about 40 good sized cookies.
